    like #2 recipe but more flavorful
    If you like regular stuffed peppers, you will like this.
    A must try.
    I made this today, 1/18/2009. It smelled great while
    it was simmering and was so yummy!! I had 3 servings
    and would have probably taken more except I wanted
    to try to save some. SOO good, even hubby liked this!
    Great with salad and bread or just great to heat you
    up on a cold winter day like we've been having around
    here. Enjoy.



    Stuffed Pepper Soup #1**, t+t

    2 pounds extra lean ground beef
    2, 16 ounce bags pepper stir fry mix (has sweet
    ...green, yellow, red bell pepper and onions - or
    ...3 cups sweet green bell peppers, cleaned, sliced
    ...and cut in 1/2, mixed with 1 cup sliced onion)
    1 1/2 teaspoons freshly minced garlic
    1 1/2 cups cooked rice
    1 teaspoon salt
    1/2 teaspoon ground black pepper
    1, 28 ounce can crushed tomatoes
    1, 15 ounce can tomato sauce
    2 cups water

    Brown ground meat with garlic.
    Stir in stir fry mix and saute a little bit.
    Place in a Dutch oven and add remaining
    ingredients.
    Bring to a boil, then simmer for 15 minutes
    or until peppers are tender, stirring occasionally.
    If you let it cook down then just add a bit more
    water, stir in and let cook a bit more.
    Makes 12/15 servings/ 3/4 of the pot full.
