Taco Cheese Soup

List of Ingredients
1 med. onion, diced
3 stalks celery, diced
1 48oz, can no sodium chicken broth
3/4 can diced green chilies
1 8oz. pkg. light cream cheese
1/2 to 1 pkg. taco seasoning mix
3 chicken breasts cooked and cubed
1 lb. light Velveeta, sliced or choppedRecipe
Place onions and celery in a pot with just enough water to cover; cook until tender and most of the water is gone, about 20 - 25 mins.
Add broth, heat to a boil.
Add chilies and cream cheese and cook until cream cheese is dissolved.
Then add Velveeta cheese and stir until it is melted through. Make sure you stir constantly so the cheese will not scorch.
Add chicken cubes and taco seasoning. Let simmer at least 1/2 hour.
The taco seasoning can make it a little salty, so adjust how much you use for yourself. Verrry good!
