    Tomato Florentine Soup #2

    1 meduim diced onion
    2 minced garlic cloves
    1 Tablespoon Olive oil
    2, 16 ounce cans diced/sliced/crushed tomatoes
    2, 16 ounce cans tomato sauce
    2 teaspoons dried oregano
    2 teaspoons dried basil
    2 teaspoons dried thyme
    1 bay leaf
    1, 10 ounce package frozen chopped spinach,
    ...thawed and squeezed dry
    salt and pepper to taste

    Saute onion and garlic in large kettle in oil.
    Add tomatoes, tomato sauce and spices. Simmer
    about 30 minutes. Remove bay leaf. Add spinach
    and heat.
    Makes about 6, 2 cup servings.
