    Tomato Stew w/Chicken + Dumplings

    Tomato Stew w/Chicken + Dumplings

    2, 14 ounce cans fat free, low sodium chicken broth
    1 pound boneless skinless chicken breasts,
    ...cut into bite size pieces
    1 cup thinly sliced carrots
    3/4 cup chopped celery
    1 chopped
    3 small new potatoes, unpeeled and cut into cubes
    1/2 teaspoon dried rosemary
    1/4 teaspoon ground black pepper
    1, 14 1/2 ounce can diced tomatoes, drained, or
    ...1 1/2 cups freshly diced
    3 tablespoons flour blended with 1/3 cup water

    for dumplings:
    3/4 cup flour
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon onion powder
    1/4 teaspoon salt
    1 to 2 tablespoons finely chopped fresh parsley
    1/4 cup cholesterol free egg substitute
    1/4 cup low fat milk
    1 tablespoon extra light virgin Olive oil

    Bring broth to a boil in Dutch oven type pan.
    Add chicken. Cover and simmer 3 minutes.
    Add carrots, celery, onion, potatoes, rosemary and pepper.
    Cover and simmer 10 minutes.
    Stir in tomatoes and dissolved flour mixture.
    Simmer until broth thickens, stirring constantly.

    for dumplings:
    Combine flour, baking powder and soda, onion powder and
    salt together in medium bowl.
    Stir in parsley.
    Combine egg substitute, milk and oil togehter in a small
    bowl; then stir into flour mixture just until dry
    ingredients are moist.
    Bring broth mixture to a boil again.
    Carefully drop the dumpling batter in 8 on top of broth.
    Cover tightly and reduce heat.
    Simmer 18 to 20 minutes, not raising the cover.
    When toothpick inserted into dumpling centers come out
    clean, dumplings are done.
