    Veal Marsala Stew

    1 lg. onion, chopped
    1 lg. clove garlic, crushed
    1 tbsp. olive oil
    2 lbs. boneless veal shoulder, cut in 1 inch cubes
    1/4 c. unsifted flour
    1 (14 1/2 oz.) can tomatoes
    1/2 c. marsala wine
    3 carrots, diced
    1/2 lb. mushrooms, quartered
    1 tsp. Italian seasoning
    1 env. low-sodium bouillon granules
    1/2 (10 oz.) pkg. frozen peas
    In microwave safe casserole, combine onion, garlic, and oil. Cover; vent. Cook on high 3 minutes, stirring once. In bowl, toss veal with flour. Add to onion mixture. Cover; cook on high 10 minutes, stirring once.
    Stir in 1/8 teaspoon pepper and all remaining ingredients, except peas. Cover; cook on high 8 minutes. Stir; cover. Cook on medium 40 minutes, stirring occasionally. Stir in peas; cook on high 5 minutes. Makes 6 servings.
