I didn't use to eat very many vegetables, and thought if I grated or shredded them, I would be able to eat them. And yes, it did work for me. Now, of course, I eat a much larger variety of veggies! I like this with some crusty bread.
List of Ingredients
Vegetable Soup #1
butter
3 or 4 grated carrots
2 julienned potatoes
1 grated onion
3 or 4 grated stalks of celery
water
1, 28 ounce can crushed tomatoes
2 or 3 cups shredded lettuce, or
...cabbage, or a mix of both
...(I mainly use the lettuce)
salt and pepper
Melt butter in a large frying pan.
Add carrots and potatoes and saute for about 5 minutes.
Add onion and celery and saute for 2 minutes.
Pour into stockpot.
Add enough water to cover and simmer just until tender.
Add more water if necessary, only enough to cover at a time.
Add crushed tomatoes and lettuce.
Salt and pepper to taste.
Make sure there is enough liquid to cover and simmer until
all vegetables are tender, which should be practically
right after it starts to simmer.
