This is a great recipe to use up some of the extra veggies
leftovers that are starting to wilt. This is one of the soup
bases I use when I am making soup for the homeless.
I also have a container in the freezer that I pop in little bits
of leftovers, then put them in crockpots the night before we
serve.
Vegetable Stock #2, easier/in crockpot
1 gallon water
2 stalks celery, large dice
2 large onions, large dice
3 carrots, large dice
1 cup Tomatoes, diced
1/2 cup cabbage, chopped
1 teaspoon garlic, minced
8 stems parsley
1 turnip, large dice (optional)
salt and pepper to taste
Place all ingredients in a crockpot/slow cooker.
Slowly bring to a boil.
Reduce the heat and simmer 2 1/2 hours.
Strain through a colander.
Use as a soup base.
