Wedding Soup
2 cups low salt chicken broth
1/2 to 1 cup frozen spinach, thawed
...and squeezed dry
1 ounce ground chicken
1 ounce ground beef
1 Tablespoon chopped onion
1 Tablespoon chopped celery
1/2 of a beaten egg
3 Tablespoons grated Parmesan cheese
salt and pepper to taste
dash hot sauce, if desired
Mix chicken and ground beef into little meatballs.
Simmer with onion and celery in the broth for 5
minutes. In a small bowl, add the cheese to the
beaten egg and mix thoroughly. Add the egg mixture,
spinach and spices to soup. Stir to evenly
distribute egg mixture. Simmer for 5 minutes. Recipe
