This is delicious! I made a double batch for a family gathering and there wasn't any left for me to take home.
Stuffing, spinach*
4 tablespoons melted butter or I Can't Believe It's Not Butter
1 medium diced onion
5 - 6 stalks diced celery
3/4 cup water
1, 10 to 16 ounce package frozen chopped spinach, thawed
and squeezed dry, (do not use canned, as it will not turn out correctly)
1 tablespoon + 1/2 teaspoon poultry seasoning
2, 14 1/2 ounce cans low fat chicken broth
1/2 cup milk
salt and pepper to taste
1, 12 ounce package unseasoned dry bread cubes for stuffing
(the kind your grocery store carries of their own in the bakery department)
Preheat oven to 375. Butter/grease a 9x13x2 inch baking pan. Can also use as cavity stuffing if you wish.
Put bread cubes in a roasting pan for easier mixing and set aside.
Saute onions and celery until almost soft. Add water and cook 5 minutes more.
While waiting, use a medium bowl and stir with a fork, the spinach, poultry seasoning and chicken broth.
Then add the celery/onion/water mixture and toss together. Sprinkle with a little salt and pepper. Pour over bread cubes and mix until cubes are moistened.
Dump into baking pan.
Cover and bake for approximately 1 hour.
