A real money saver especially if you make your own croutons.

    6 tablespoons butter, (3/4 stick)
    2 diced onions
    1/2 cup thinly sliced celery
    1/2 cup finely diced carrots
    1 teaspoon dried parsley
    2 cups chicken broth
    1/2 teaspoon poultry seasoning
    salt and pepper to taste
5 cups butter croutons, (see note below
    ...to make your own)

Saute onions, celery, carrots and parsley in butter for 2 minutes.
Add broth, poultry seasoning, salt and pepper to taste. Simmer
for 15 minutes, or until vegetables are tender. Stir in croutons.
Cover. Remove from heat and let set for 5 minutes. Toss and serve.

    Note:
    Butter Croutons
Spread both sides of stale bread with butter. Cut into cubes.
Leave plain or sprinkle with herbs and seasonings as desired.
Spread in shallow pan. Bake at 350 degrees F. for 15 - 20 minutes,
tossing every 5 minutes, this makes them brown and crisp.
    Store in airtight containers.
