for a large quantity if you use it alot:
Self Rising Flour
3 pounds all purspose flour
9 LEVEL teaspoons cream of tarter
4 LEVEL teaspoons baking soda
2 LEVEL teaspoons powdered confectioners sugar
3 LEVEL teaspoons salt
Sift THREE times and keep in a covered container.
Notes:
Baking soda alone can be used with all purpose flour in
any mixture containg an acid in the form of lemon juice,
jam, or sour milk.
If used without an acid it tends to turn the mixture yellow,
and can give an unpleasant taste.

Substitution
For each cup substitute this mixture:
1 cup minus 2 teaspoons all-purpose flour
plus 1 1/2 teaspoons baking powder
and 1/2 teaspoon salt

Self Rising Flour
4 Cups All Purpose Flour
1 Tablespoon Sugar
1/2 Tablespoon Salt
2 Tablespoons Plus 1 Teaspoon Baking Powder
Sift together all ingredients well.
Store in sealed container or zipper storage bags.
Makes about 4 1/4 cups
May be used in any recipe calling for self rising flour.
