Baked Sun Dried Tomato Fish

8 marinated sun dried tomatoes, drained
4 slices thinly sliced onion
3 garlic cloves
1 tsp. olive oil
6 fresh lemon slices
1 lb. flounder/cod/halibut/salmon
1 tbsp. fresh lemon juice
8 black olives, pitted and halved

Preheat oven to 375. Coat an 8x8x2" baking dish with non stick cooking spray.
Mix tomatoes, garlic and olive oil in a blender/food processor until tomatoes are finely chopped.
Place lemon slices on bottom of the baking dish.
Layer fish over top of lemon slices.
Separate onion slices and lay 1 slice over each piece of fish.
Spread the tomato mixture over top of the fish and onions.
(During the last 3 minutes of baking, sprinkle with the olives.)
Bake, uncovered, for 10 - 20 minutes, or until fish flakes easily when pierced.
Serve with fresh lemon wedges.
Makes 4 servings.
