Sun Dried Tomato Muffins

List of Ingredients
3 c. flour
1 1/2 tbsp. baking powder
1 1/2 tsp. salt
2 tbsp. sugar
2 eggs
1/2 c. vegetable oil
1 1/2 c. skim milk
1/4 c. sun dried tomatoes, oil packed, drained + chopped
1 finely chopped onion
1/3 c. freshly grated Parmesan cheese
Recipe
Preheat oven to 400. Grease the bottoms of 12 large muffin tins.
Sift flour, baking powder, salt and sugar together in a large bowl. Set aside.
Mix together the eggs, oil and milk. Set aside.
Toss the tomatoes, onion and cheese with the dry ingredients to just coat.
Make a well in the center and pour in the liquids.
Stir until just combined, avoid over stirring.
Fill muffin tins 2/3 full.
Bake for 20 - 25 minutes, until a golden brown.
