Sun Dried Tomato Sauce

2oz. sun dried tomatoes, roughly chopped
(plump in a little warm water after chopping)
3/4 c. chopped tomatoes, (can peel and deseed if desired)
1 tsp. minced garlic
1/2 c. dry white wine
3 tbsp. olive oil
6 tbsp. unsalted butterRecipe
Combine sun dried and chopped tomatoes, garlic, wine and olive oil in a small saucepan.
Cook over a medium heat, uncovered, for 5 minutes or until wine evaporates and mixture begins to thicken slightly.
Remove from heat and whisk in butter.
Transfer to a blender and blend until it's chunky smooth.
Makes 1 cup/ serves 4.
