    Spinach + Sun Dried Tomato Meatloaf

    for the meatloaf:
    1 1/2 lb. lean ground beef
    1/2 lb. lean ground pork
    1 . soft breadcrumbs
    1 egg
    1 tsp. salt
    1/2 tsp. black pepper

    for the stuffing:
    1 10oz. pkg. frozen chopped spinach, thawed, drained and squeezed dry
    1 c. crumbled cheese
    1/2 . thinly sliced sun dried tomatoes

    for the topping:
    1 c. ketchup
    2 tbsp. packed brown sugar
    2 tbsp. chopped sun dried tomatoes

    Recipe



    Preheat oven to 350.
    for the meatloaf:
    Combine the meats, breadcrumbs, egg, salt and pepper and mix well.
    Separate into halves and spread 1/2 in the bottom of a 9x12x2" baking pan.

    for the stuffing:
    In the center, leaving a small edge of meat showing, sprinkle first the spinach, then the cheese and last the sun dried tomatoes.
    Top with the remaining meat mixture, covering the stuffing and seal the meat together around the edges.

    for the topping:
    Mix ketchup, brown sugar and tomatoes together and spread on top of meatloaf.
    Bake for 1 hour. The top should be brown .
    Remove from the oven and let set for 10 minutes.
    Slide onto serving dish and cut into 1" slices.
