Sun Dried Tomato Vinaigrette Dressing

1/4 c. dry, sun dried tomatoes, (no oil type)
1/2 c. boiling water
1 c. tomato, seeded and chopped
2 tbsp. balsamic vinegar
1 clove minced garlic
1 tbsp. extra virgin olive oil
1/4 tsp. salt
1/4 tsp. black pepperRecipe
Combine sun dried tomatoes and boiling water in a bowl. Let stand 30 minutes. Drain and reserve water.
Chop sun dried tomatoes.
Combine sun dried tomatoes, the chopped tomato, vinegar, and garlic in a blender. Combine until smooth.
Add reserved sun dried tomato liquid, oil, salt, and pepper. Blend until smooth.
Makes 8 servings.
