Apple Filling for Cakes, Etc.

List of Ingredients
3 large raw grated tart apples
juice of 1 lemon
dash of salt
1/2 c. sugar
1 egg Recipe
Mix all the ingredients together well.
Cook in the top of a double boiler until thick.
Let cool and spread between white or spice cake layers.
Makes enough for one 9" cake filling.
Will keep for up to 3 days in a small bowl with a lid, or tightly covered plastic wrap. Will keep longer if refrigerated.
Can also be used in muffins. Just place 2 tbsp. of the filling in the middle of the batter before baking.
