Freezing Tomatoes
When you have extra tomatoes in the summer, wash them, put them on cookie sheets, freeze them, and then bag them for future use.
In the winter, put them in a colander and let them defrost, slip off the skin and throw away the juice that has accumulated.
You can then make up your favorite recipes (spaghetti sauce, chili sauce etc.) from the pulp. Use the sauce then or you can use it later.
This is good to do if you have the time and get an over bundance of tomatoes all at one time.
Saves the work of peeling the tomatoes and also saves time in cooking down of the juice.
