1 lb (500 g) asparagus, trimmed
1/4 cup lemon-infused grapeseed oil, extra virgin olive oil or any flavoured
oil
Kosher salt, freshly ground black pepper to taste
Preheat toaster oven and baking dish to 400F.
Toss asparagus in oil. Place asparagus and oil in preheated baking dish.
Roast 10 minutes, turning asparagus twice.
Remove asparagus to serving tray. Pour oil on top. Toss with salt and
pepper.
