2 sirloin steaks, each about 1 1/2-inches thick
1 tbsp olive oil
2 tsp each: kosher salt, coarsely ground black pepper
2 tbsp blue cheese
1/4 cup red wine
1 tbsp brandy
1 tsp butter
Preheat toaster oven on broil. Place slotted tray in baking dish.
Coat steaks on both sides with oil. Press salt and pepper into oil. Place
steaks on slotted tray. Broil on upper rack 10 to 15 minutes, turning once,
for rare. (Times will vary if you buy a thinner steak, so watch carefully.)
Place 1 tablespoon cheese on each steak. Broil 30 seconds or until melted.
Remove steaks to warm plate. Cover to keep warm.
Remove slotted tray from baking dish. Add wine and brandy to dish, stirring
to remove any brown bits from bottom. Broil until liquid comes to a boil,
about 2 minutes. Stir in butter. Cook 30 seconds.
Serve steaks drizzled with wine sauce.
