Set a Black & Decker® Toast-R-Oven™ 800 Series to 450°F. Heat 5 minutes. Line the oven pan with foil.
Using a small sharp knife, cut several slits into the pork and stuff with garlic. Place roast on oven pan. Surround with potatoes, carrots and Brussels sprouts.
In a small bowl, combine oil and 1/4 teaspoon thyme. Drizzle over vegetables. In same bowl, combine remaining thyme, honey, mustard, pepper and salt. Brush half the mixture onto roast.
Place roast in oven. Reduce temperature to 350F and roast 1 1/4 –1 1/2 hours or until internal temperature of the roast reaches 160F. Brush with remaining honey mixture.
