    fresh - Herb + Lemon Turkey Breast

    List of Ingredients

    1, 4 to 6 pound 2 sided turkey breast section
    1/4 teaspoon dried poultry seasoning
    1/4 teaspoon dried rosemary
    1/4 teasoon dried oregano
    1/4 teaspoon dried thyme
    1/4 teaspoon onion powder
    4 to 6 sprigs fresh parsley
    1 fresh lemon, washed
    cornstarch and cold water, *see below

    Recipe

    Preheat oven to 325 degrees F. Use an 11x9x1 inch roasting pan with a rack.
    Starting at the bottom edge on each side of the turkey breast section, loosen the
    skin up to the top...leaving the skin connected at the breast bone area.
    Be careful not to tear the skin.
    Mix the herbs together. Sprinkle each side with half of the seasoning.
    Place on the rack in the roasting pan, the breast sides up.
    Deeply pierce the lemon several times and place into the cavity.
    Cover lightly with foil and bake until the meat reaches 170 - 175 degrees F. on a
    meat thermometer.
    Allow to set for 10 minutes before carving.
    Drain the liquid from the pan into a large measuring cup and skim off any fat.
    Squeese the juice from the cooked lemon into this.
    Measure how much liquid is in the cup.
    *For each 1 cup of juices, dissolve 1 level tablespoon of cornstarch into 1/4 cup
    Cold water. Pour this and the juices into a saucepan.
    Bring to boil and simmer for 1 minute or until thickened.
    Makes 12 servings.
    Serve with gravy spooned over sliced turkey.
