    ground - Mock French Veal

    ground - Mock French Veal

    1 1/4 cup ground fresh/uncooked turkey
    1/4 cup flour
    1/2 teaspoon salt
    1/8 teaspoon ground black pepper
    3 tablespoons butter or cooking oil
    1 cup chicken broth
    1 tablespoon lemon juice

    Combine the flour, salt and pepper together. Set aside.
    Pat the turkey into 5 thin patties between waxed paper.
    Dip in the flour mixture. Shake off excess flour.
    In large frying pan, heat the butter and brown the patties on each side, (make sure they are thoroughly cooked).
    Remove from the frying pan and keep warm.
    Stir the remaining flour mixture into the frying pan.
    Add the broth and lemon juice.
    Stir until thickened, scraping browned pieces from bottom of pan.
    Return the patties to the pan.
    Cover and simmer for about 3 minutes.
    Serve garnished with parsley and lemon slices.
    Makes 3 - 5 servings.
