fresh - Grilled Turkey

List of Ingredients
10 - 12 pound thawed turkey
3 tablespoons cooking oil
1 1/2 pounds fresh bacon
salt and pepper to taste
1 tablespoon crushed red pepper flakes
2 cups apple cider vinegar, (1 pint)
1 cup cold water, (1/2 pint) Recipe
Cut the turkey in half and rub with the oil.
Wrap both halves with the bacon.
Prepare the grill for medium/indirect heat cooking.
For gas grills:
Place a drip pan under 1/2 of the rack.
Then spray the rack with cooking spray.
Turn on the heat on the other half of the grill.
For charcoal grills:
Place the coals around the outside edges of the grill.
Place a drip pan in the center.
Spray the rack. Light the charcoal.
Place the turkey, breast side up, on the grill rack over
the drip pan.
Cover and grill turkey 2 1/2 hours, or until meat until
a thermometer inserted into deep portion of the thigh
reaches 180 degrees F.
The leg bone will turn and separate from the meat.
The turkey should be golden brown.
Allow the turkey to cool.
Remove the meat from the bones and chop.
Add salt and pepper to taste.
Sprinkle with red pepper flakes and mix well.
Mix vinegar and water together.
Sprinkle over the meat.
Stir gently into meat.
Add water if vinegar mixture is too strong.
