1/2 cup cranberry sauce
1/2 cup tomato salsa
2 cups mashed potatoes
1 cup stuffing
1 cup chopped cooked vegetables
1 1/2 cup chopped cooked turkey meat
1/4 cup chopped fresh parsley
1/4 cup minced onion
2 eggs
salt and pepper to to taste
1 teasp. smoked paprika
1 cup breadcrumbs
2 tblsp. canola or veg. oil
Heat oven to 200 degrees F.
In a small saucepan, combine the cranberry sauce and salsa.
Mix well and bring to a simmer over low heat.
In a large bowl combine the mashed potatoes, stuffing,
vegetables, turkey meat, parsley, onion, eggs, salt, pepper
and paprika. Mix well.
Place the breadcrumbs in a large, shallow bowl.
In a Large skillet, heat the oil over medium/high heat.
With lightly floured hands, form about 1/3 cup of the mashed
potato mixture into a patty, then set it in the bowl of breadcrumbs,
turning it to lightly coat both sides.
One or two at a time, place the patties in the skillet and cook 3 to
4 minutes per side, or until lightly browned.
Transfer the fritters to a baking sheet and place into the oven to
keep warm. Serve with warm cranberry salsa.
Serves 4 to 6.
