B L T Stuffed Tomatoes

List of Ingredients
8 med. ripe fresh tomatoes, cleaned
1/2 lb. bacon
1/4 head thinly shredded lettuce
1/2 c. shredded cheddar cheese
3 tbsp. Miracle Whip or mayonnaise
1/2 tsp. vinegar
1/8 tsp. Old Bay seafood seasoning

Slice the tops off the tomatoes and set aside.
Scoop the insides out. Chop 1/2 c. or more and set aside.
You may save the rest of the insides for another use, if desired.
Rinse the tomato bowls, and set upside down on paper towels to drain.
Cook the bacon until crisp, then drain on paper towels. Set aside.
Mix the lettuce with the chopped tomato.
Add the cheese, Miracle Whip, vinegar, seasoning and pepper sauce.
Stir until well blended.
Crumble the cooked bacon into bite size pieces and stir into the lettuce mixture.
Place the tomatoes upright on a platter.
Spoon the stuffing into the tomatoes, mounding slightly.
You may serve with the tomato tops replaced or not.
Serve immediately.
Makes 8 servings.
