Bacon Stuffed Sweet Potatoes

8 medium sweet potatoes
vegetable oil
9 slices cooked and crumbled bacon
1/2 c. sour cream
2 tbsp. milk
1 beaten egg
1 tsp. sugar
1 tsp. salt

Preheat oven to 400.
Scrub the potatoes thoroughly, rub the skins with oil, and poke a few times.
Bake for 1 hour or until done. Let cool to the touch.
Slice skin away from top of each potato.
Carefully scoop out the pulp, leaving about 1/4" shell.
Mash the pulp.
Add the bacon, sour cream, milk, egg, sugar and salt and mix well.
Spoon the mixture back into the potato shells.
Sprinkle with a little paprika and bake for 10 minutes.
Makes 8 servings.
