    Baked Crunchy Onion Potatoes

    4 large russet potatoes, scrubbed, cut into 1/4" slices
    1 tbsp. butter or I can't believe its not butter light
    2 cloves garlic, minced
    1 tsp. dried thyme
    2 large eggs
    1/4 c. skim milk
    1 c. fine Italian seasoned breadcrumbs
    1 large yellow onion, cut 1/4" and separated into individual rings
    salt and pepper

    Heat oven to 450. Lightly coat a 13x9x2" ovenproof dish with non stick cooking spray.
    Arrange potatoes, overlapping slightly and brush with butter.
    Sprinkle potatoes with garlic, salt, pepper and thyme.
    In a bowl whisk together the eggs and the milk, mixing well.
    Dip onion rings into the milk and then in the crumbs.
    Pat the crumbs onto the onion rings so they fully cover and stick to the rings.
    Arrange breaded onion rings in a single layer on top of the potatoes.
    Bake for 30 - 35 minutes, turning the onion rings once during baking, or until the potatoes are cooked and the onion rings are crisp and brown.
    Makes 4 servings.
