Baked Tomatoes #2
Thick slice tomatoes, or quarter them
Arrange in a pyrex type baking dish.
Drizzle with Olive oil.
Cover with slices of Mozzarella and Provolone cheeses.
Mix an egg into some Ricotta and spread on.
Sprinkle FRESHLY grated parmesan cheese on.
Sprinkle with salt and pepper to taste.
Bake until cheese is bubbly.
