Beets, w/Pineapple
1 16oz. can sliced beets , undrained
1 15oz. pineapple chunks in juice, undrained
2 tbsp. vinegar
2 tbsp. sugar
2 tbsp. tablespoons cornstarch
Drain beets, reserving 1/2 c. liquid.
Drain pineapple, reserving 1/4 c. liquid.
Combine beets and pineapple, reserved liquids and
vinegar in a 2 qrt. saucepan.
Stir together sugar and cornstarch; add to beet
mixture.
Cook over medium heat until clear and thickened.
Serve hot, or chill and serve cold.
Makes 8 servings.
