1/2 pound black eyed peas, soaked
4 garlic cloves crushed
2 teaspoons salt
1 teaspoon ground black pepper
4 Tablepoons water
Olive oil as required
lime juice to taste
Once peas have softened, rub off skins then soak for 30 more
minutes. Drain and rinse peas.
Process peas, garlic, salt and pepper in a blender/food processor.
Add water to get a smooth, thick puree while blending.
Heat oven to 250 degrees F.
Fill a cast iron skillet with 2 inches of oil.
Fry 1 Tablespoon of batter until golden brown.
Repeat until all batter has been fried in this manner.
Remove each fritter from oil and drain on papper towels.
Keep drained fritters in oven to keep warm.
Serve hot with a geneorous sprinkling salt and lime juice.
Makes 20 servings.
