Broccoli Rice Casserole

1/2 c. chopped onion
1 tbsp. + 1 tbsp. butter, divided
2 c. cooked white rice
1 10 3/4oz. can cream of celery soup
1 10oz. pkg. cooked frozen chopped broccoli, well drained
1 c. cheese dip
1/2 c. fresh bread cubesRecipe
Cook and stir onion in 1 tbsp. of the butter in large skillet on
medium heat until tender.
Add the rice, soup, broccoli and cheese dip. Mix lightly.
Spoon into a 1 1/2 quart casserole.
Toss together the remaining 1 tbsp.melted butter, and the
bread cubes. Sprinkle over casserole.
Bake at 350 for 30 - 35 minutes or until thoroughly heated.
For something extra special, garnish with green onion slices
and red pepper strips.
