Broccoli w/Tomatoes, zesty
2 tsp. Olive oil
1 pound broccoli florets
1 clove garlic, minced
1/8 tsp. chili pepper flakes, crushed
1/4 c. crushed tomatoes
1/4 c. Mild salsa, (mild is best for this)
ground black pepper to taste
Heat oil in a heavy saucepan over medium high heat. Saute
broccoli, garlic, black pepper and chili pepper flakes 20 seconds.
Add tomatoes and salsa. Cover saucepan and reduce heat to medium.
Simmer 7-8 minutes or until broccoli is bright green and tender and
tomato sauce has thickened. (Add a little water if necessary.)
Serves 6.
Can be served as a side dish or over rice or pasta.
