Butter Bean Casserole
6 slices chopped bacon, fried and
...drained, drippings saved
1 / 3 cup diced small celery
1 / 2 cup diced small onion
1 minced garlic clove
2 tablespoons flour
1 1/4 cups canned diced tomatoes, (12 ounces)
salt and pepper to taste
1 tablespoons sugar
32 ounces cooked and seasoned butter beans, (1 quart)
Saute celery, onion, and garlic in bacon drippings.
Stir in flour.
Cook slowly until flour browns slightly and begins to thicken.
Stir in tomatoes, salt, pepper, and sugar and cook for
a few minutes before adding butter beans.
Simmer together before putting in a casserole dish .
Sprinkle bacon on top of casserole .
Bake at 350 degrees oven for 10 minutes .
Serve hot.
