1 large cabbage, hand-chopped
2 onions, chopped
3 green onions, chopped
1 stalk celery, chopped
1/2 bell pepper, chopped
3 cloves garlic, minced
1/2 cup butter
7 slices bread, soaked in enough milk to moisten well
2 cups cream, (1 pint)
1/2 cup, or more, grated American orCXheddar cheese
Salt and red pepper to taste
Italian bread crumbs
Parboil cabbage (do not fully cook) in salted water. Drain
thoroughly and set aside. Saute onions, green onions,
celery, bell pepper and garlic in enough cooking oil to
moisten the vegetables. Add the cabbage, butter, bread,
cream and cheese. Break apart the bread and stir well,
seasoning to taste. Pour half the mixture into a casserole
and top with bread crumbs; layer remaining cabbage and
top with additional crumbs. Bake, uncovered at 350 degreesF.
for about 30 minutes or until bubbly.
Note:
This may be prepared ahead of time, placed in the refrigerator
for a day or two and baked when ready to serve.
