1 1/2 pounds potatoes, about 5,
...peeled cut in small chucks
6 cups shredded cabbage, about 1 head
4 ounces cream cheese, softened
salt
1/2 cup chopped green onions, (scallions)
pepper
1 cup grated Sharp cheese
Preheat oven to 425 degrees F. Grease a 3 quart baking dish. Put potatoes in pot, add water to cover and salt.
Cover and cook cook until soft. Meanwhile, put cabbage
in pot of salted water and cook until tender. Drain.
Drain mash potatoes. Add cream cheese, a little more salt
and onions. Fold in well drained cabbage. Season with
some salt and pepper. Maybe even a hint of garlic powder too. Spoon into baking dish. Sprinkle with cheese. Bake,
uncovered, for 30 - 50 minutes, depends on how crunchy
you like your top.
