Cabbage w/Potato Casserole**

I was looking for something a bit different to make
with cabbage for our family reunion this year, which
was yesterday, 9/21/08. I came across a few different
recipes and none of them seemed to be "just right."
So I tried some ideas from a few of them and came up
with this one. I doubled the recipe and there were only
side scrapings left on the pan at the reunion. I thought
it tasted really, really good. Try it for yourself.
Cabbage + Potato Casserole**
6 peeled potatoes, julienned
1 cup diced onion
4 cup shredded, partially cooked cabbage
2 Tablespoons butter
1, 10 3/4 ounce can cream of celery soup
1/2 cup salad dressing
3/4 cup milk
1 cup shredded Provologne cheese
1 cup shredded Monterey Jack cheese
Saute onion in butter. Add soup, dressing and milk
and mix well. Combine with cabbage.
Coat a 3 quart baking dish with cooking spray.
Place 1/2 the cabbage in the bottom, then 1/2 the
potatoes and then sprinkle with 1/2 of each of
the cheeses. Repeat.
Bake at 350 for 30 minutes or until potatoes
and cabbage are tender.
