Carrots w/Pineapple Casserole
1 pound carrots
1, 20 ounce can pineapple tidbits, drained and
...liquid reserved
1 cup brown sugar
2 Tablespoons cornstarch
1/4 cup butter, (1/2 stick)
Scrape carrots, cut crosswise.
Cook in enough water to cover until tender.
Drain and place in baking dish.
Sprinkle with pineapple tidbits.
Mix reserved liquid, brown sugar and cornstarch well.
Pour over carrots and pineapple.
Pour melted butter over carrots.
Bake until juice thickens, approximately 35 to 40 minutes.
