Corn + Potato Casserole
4 cups hot mashed potatoes
1 cup sour cream
1 egg, lightly beaten
1/3 cup minced green onions
1 cup corn kernels, fresh or frozen
1/2 tsp. pepper
1 teaspoon salt
Paprika
Preheat oven to 350 degrees. Whip together potatoes and sour
cream until mixed well. Beat in egg. Stir in green onions, corn,
pepper and salt. Spoon into a greased 2-quart casserole dish.
Sprinkle with paprika and bake for 40 minutes.Recipe
