Corn, fried w/bacon
6 strips bacon
1/3 c. chopped onion
1/3 c. chopped bell pepper
1 16oz. bag frozen corn
1 large tomato,diced
1/2 tsp. salt
dash pepper
1 tsp. ground cumin
Fry, drain and crumble bacon. Reserve 1/4 c. of the drippings.
Saute onion and bell pepper in bacon drippings.
Add corn, tomato, salt, pepper and cumin.
Cook over medium heat for about 10 minutes, stirring frequently.
Sprinkle bacon pieces over top and serve.
Makes 4 - 6 servings.
