This corn recipe is very easy to prepare,
and tasty, too!
Corn w/Bacon, skillet fried
4 slices bacon
1 small green bell pepper, chopped
1/4 cup minced onion
3 cups fresh corn, cut from the cob (can substitute fresh-frozen)
1/4 teaspoon salt
1/8 teaspoon ground black pepper
Fry bacon in large skillet until crisp.
Remove bacon, reserving the drippings.
Crumble bacon and set aside.
Add green pepper and onion to drippings in skillet.
Saute over medium heat, stirring constantly, until vegetables
are crisp tender.
Stir in corn and cook over medium heat 8 to 10 minutes,
stirring frequently.
Stir in salt and pepper.
Top with crumbled bacon.
Makes 4 servings.
