Creamed Spinach

List of Ingredients
3, 10 ounce packages frozen chopped spinach, thawed
...and squeezed dry
3 tablespoons butter or Olive oil
1 cup chopped yellow onion
6 minced garlic cloves
1 1/2 cups plain low fat yogurt
1/4 cup grated Parmesan cheese
salt and pepper to tasteRecipe
Melt butter or heat oil in a large saucepan over medium/high heat.
Saute garlic and onions until slightly browned.
Add the spinach and continue to saute until spinach is heated
completely through, about 3 minutes.
Reduce heat to low.
Add yogurt and cheese to spinach mixture and combine
until the yogurt is heated, about 3 minutes.
Season with salt and pepper, and serve warm.
Makes 6 - 8 servings.
