Creamy Zucchini + Tomato Casserole
1 1/2 pounds zucchini
1/4 cup flour
1 1/2 teaspoons salt
1 1/2 teaspoons dried oregano
1/4 teaspoon pepper
1/4 cup olive oil or salad oil
tomato slices to fit dish
1 cup sour cream
1/2 cup parmesan cheese, grated
Heat oven to 350 degrees F.
Lightly grease 8x8x2 inch baking dish.
Scrub zucchini. Cut crosswise in 1/4 inch slices.
Combine flour with salt, oregano, and pepper.
Toss slices in seasoned flour to coat well.
Slowly heat oil in large heavy skillet.
Saute zucchini until brown. Drain.
Place zucchini in bottom of dish.
Place tomato slices on top of zucchini.
Sprinkle a little more oregano and salt into
sour cream and spread over tomatoes.
Sprinkle parmesan cheese over top.
Bake 30-35 minutes until cheese melts.
