Creole Black Eyed Peas

List of Ingredients
1/2 c. chopped onion
1/3 c. chopped green pepper
1/4 c. chopped celery
1 tbsp. butter
1 8oz. can tomato sauce
1 bay leaf
1 2/3 c. canned black-eyed peas, drained
1 8oz. can stewed tomatoes
2 tbsp. white granulated sugar
1 tsp. dried parsley flakes
2 chicken bouillon cubes
1/8 tsp. salt
1/8 tsp. pepperRecipe
Saute onion, green pepper and celery in butter several
minutes.
Add remaining ingredients and simmer, covered for 20 to 30 minutes.
Remove bay leaf.
Makes 4 servings.
