1 envelope plain gelatin
3 tablespoons cold water
2 tablespoons lemon or lime juice
1 teaspoon grated onion
3/4 teaspoon salt
1/4 teaspoon paprika
1 cup cucumber, pared, seeded, and chopped
1/2 cup light frozen whipped topping, thawed
Soak gelatin in water. Dissolve in a saucepan over heat. Add lemon or
lime juice, onion, salt, and paprika. Chill this mixture until almost
set. Drain cucumbers well. Beat the gelatin mixture gradually into
the whipped topping. Fold in cucumbers. Fill a wet mold with mixture
and chill thoroughly. When set, invert onto a platter and garnish with
thinly sliced lemon or lime slices. Serves 4.
