Curried Potatoes + Tomatoes

Curried Potatoes + Tomatoes
1/4 cup water, low salt chicken or veg. broth
2 onions, sliced
pinch ground ginger
1 teaspoon dried thyme leaves
1 teaspoon dried marjoram
2 tablespoons fresh chopped parsley
1 teaspoon dried basil leaves
1 teaspoon dried dill leaves
1/2 teaspoon ground turmeric
2 cups chopped mushroom s
6 small potatoes, quartered
3 fresh tomatoes, thickly sliced
1 Tablespoon lemon juice
2 teaspoons curry powder
Heat water or broth in a large skillet or heavy pot.
Add onions, ginger, thyme, marjoram, parsley, basil,
dill and turmeric.
Cook and stir onions and spices for 5 minutes, adding
liquid as needed.
Add mushrooms.
Cook and stir for 5 minutes more.
Add potatoes.
Cook and stir for 3 minutes more, adding liquid as needed.
Add tomatoes and cook, uncovered, for 20 minutes.
Add lemon juice and cook for 5-7 minutes more or until
potatoes are tender.
