2 eggs, whites separated from yolks
2 c. grated potatoes
1 tsp. salt
1/8 tsp. pepper
1 small grated onion
2 tbsp. fine dry bread crumbs
Recipe
Beat the egg yolks. Set aside.
Beat egg whites until stiff but not dry. Set aside.
Grate the potatoes directly into the yolks and mix to prevent discoloration.
Add the salt and pepper, onion and bread crumbs.
Fold in the egg.
Drop by tablespoons onto a hot greased griddle.
Brown very slowly on both sides.
