Fresh Tomato Pie

List of Ingredients
1 9" pie shell
1 sliced yellow onion
7 sliced ripe tomatoes
ground black pepper to taste
1/3 c. shredded Mozzarella cheese
1/3 c. freshly grated Parmesan cheese
3/4 c. mayonnaise
2 tsp. fresh basil
2 tsp. fresh oregano Recipe
Preheat oven to 350.
Bake the pastry shell for 8 - 10 minutes or until browned.
Place the onion in the bottom of the pie shell.
Arrange the tomatoes over top of the onions.
Sprinkle with the pepper.
Use a medium bowl to combine the Mozzarella cheese, Parmesan cheese and the mayonnaise.
Spread the cheese/mayonnaise mixture evenly over the tomatoes.
Mix the basil and oregano together and sprinkle over top of the mayonnaise mixture.
Bake for 20 - 25 minutes or until golden brown.
Makes one 9" pie.
