Fresh Vegetables Casserole
2 zucchini, sliced
2 large tomatoes, sliced
2 large potatoes, sliced
2 teaspoons garlic, minced
1 1/2 ounce Olive oil
1 1/2 tablespoon basil, chopped
salt and pepper to taste
Pre-heat the oven to 400. Toss together all ingredients in
a large mixing bowl. Place in a lightly oiled casserole
dish. Bake for 35 minutes (or until the potatoes are soft).
Serve warm.
