1 pound long carrots (about 6 medium)
2 tablespoons butter
1/3 cup packed brown sugar
Cut carrots in half crosswise (round way), then lengthwise
into 2 or 3 sticks. Simmer, covered, in a small amount of
boiling salted water for about 10 minutes or until
crisp/tender. Drain. Melt the butter. Stir in sugar until
dissolved. Add carrots. Cook over medium/low heat about
10 minutes, turning often. Makes 6 servings.
